Blackened Cod Sandwiches
I stumbled across this Food & Wine recipe that looked really delicious, but I wanted more of a fish filet vs. a chopped fish patty so I decided to substitute the tuna burger for a blackened cod filet and it turned out PERFECT! The blackened cod was really juicy and had a great flavor, and the lemon ginger mayo was FULL of flavor with the soy sauce, ginger, lemon, and honey, and the cucumber salad balanced everything out by being very refreshing and crunchy with a hint of sweetness. The sandwich is a 10/10 would definitely recommend!

Blackened Seasoning
1/2 teaspoon cayenne pepper
2 teaspoon smoked paprika
2 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon oregano
1 teaspoon cumin
Fish
1.5 lbs cod
Ginger-Lemon Mayonnaise
1 cup mayonnaise
2 tablespoons soy sauce
2 tablespoons chopped scallion
1 tablespoon black sesame seeds
2 teaspoons grated fresh ginger
Zest of 1 lemon
2 teaspoons fresh lemon juice
Black pepper
MODIFICATION: 1+ tablespoon honey
Cucumber Salad
5 Persian cucumbers, thinly sliced
1/2 medium red onion, thinly sliced
3 tablespoons rice vinegar
1 tablespoon honey
1 teaspoon kosher salt
Black pepper
