Sweet & Creamy Chopped Coleslaw
My inspiration for this copycat coleslaw lies somewhere in-between KFC & Popeyes, and I think this recipe is better than both. I chopped the coleslaw mix so that it has the same texture, and I added a little more sugar/honey so it’s a little bit sweeter than what you’ll find at the two fast-food joints. But in the end, this coleslaw is delicious, creamy, slightly tangy, and the perfect counter-part for a BBQ cookout, Memorial/4th of July/Labor Day party, or any of your Summer & Fall festivities.

Sweet & Tangy Coleslaw
Yield: 6-8
Ingredients
- 28 oz Coleslaw mix- 2 14oz bags (or you can slice/chop your own cabbage and carrots)
- 1 cup mayonnaise
- 1/4 cup honey
- 3 tablespoons dark brown sugar
- 2 tablespoons sweet pickle relish
- 4 tablespoons dill pickle relish
- 1 tablespoon dijon mustard
Instructions
- In your food processor, pour your bagged coleslaw mix in and carefully pulse the mix until it’s the consistency that you like. One bag will fit at a time.
- In a large bowl, mix mayonnaise, honey, dark brown sugar, sweet relish, dill relish, and dijon mustard in a bowl.
- Add the chopped coleslaw to your base and mix together.
- Refrigerate for 1-2 hours or overnight for the flavors to meld together.
